Bucha Brewhouse & Bistro opened its doors on September 29th, 2018 in the Grassroots District of Downtown Princeton. Owner, Kayla Alred, holds the vision of encouraging a culture in West Virginia that empowers citizens to take control of their health and well-being. Bucha provides a daily rotating menu with a variety of food styles and puts ingredients to creative use for things like our house-made tofu mayo and cashew “cheesecakes.” Offering food that is inclusive for as many people as possible is what we do — experience something new with us every day.

We are always looking for new ingredients to feature on our menu. Are you a local grower?

vegan & gluten-free

We take pride in making all of our sauces and dressings from scratch, ensuring they are vegan and gluten-free. We craft our “creamy” soups with various types of plant-based milk and thicken them with cornstarch instead of flour. 

While we are not dietary professionals, we do everything we can to ensure gluten-free and vegan experiences. For your comfort, feel free to ask questions about the ingredients of a particular meal when ordering.
